
Rainbow Antipasto & Lemon Kissed Ravioli Skewers - A Taste of Island Sunshine!
I’ll be honest, this one came from a bit of a fridge raid. You know the kind, that hopeful look into the shelves where nothing really goes together… until it somehow does.
This recipe is one of those that I didn’t plan. Some odds and ends of antipasto bits, olives, artichokes, pickled onions (I always have a jar), and of course, whatever basil hadn’t wilted in the fridge unless you grow your own and have a fresh supply which is first prize. I just love all the bright colors of this dish, it just feels like a party on a stick. And with just the right lemony vinaigrette, it becomes one of those “wow that was actually so easy” moments.
Now I won’t give away all my secrets, but just know this, there is, color, texture, a bit of crunch, a bit of cheese (okay, a lot of cheese), and little pops of fresh herby joy. This is my second year I am making these to take to our girls Christmas in July party, and I think this year I need to make more than I usually do!
Oh and don’t skip the bread. Toasted ciabatta with some hummus to complete everything.
This dish has become my go to for when I want something fresh. It looks like I spent way more time on it than I did (love that for us), and everyone always goes quiet while eating, which, let’s be honest, is the biggest compliment.
I think what I love most about it is that it’s versatile. Add some meat if your Meatarians want it. Skip it if they don’t. It’s not about rules here. It’s about joy, and colour, and making something beautiful without stress.
