Sunset Slaw: The Essence of Pantry Magic
You know how you always have those go to veggies in your fridge? For me, it’s almost always beets and carrots. So, I was messing around in the kitchen, and this warm slaw happened, it’s totally my kind of dish! It just goes to show how you can whip up something really special with stuff you probably already have. Get ready to turn some simple roots into a super colorful and yummy side that’ll jazz up anything from flatbreads to quinoa bowls!

Ingredients
2 medium beets, peeled and shredded (about 2 cups), 2 medium carrots, peeled and shredded (about 1.5 cups), 2 tbsp olive oil, 1 tsp ground cumin, 1 tbsp honey, salt and freshly ground black pepper to taste, 2 tbsp nuts (like cashew or pecan) for garnish, and chunks of feta.
For the Orange Tahini Drizzle
3 tbsp tahini, 2 tbsp fresh orange juice, 1 tbsp warm water (or more, to thin), 1 tbsp honey, 1/2 tsp orange zest, pinch of salt.

First off, get those shredded beets and carrots into a big bowl.
Now, grab a big skillet or non stick pan and warm up your olive oil over medium heat. Toss in the shredded beets and carrots, along with the cumin and honey. Don’t forget a little salt and pepper! Give it all a good mix and let it cook for just about 5 to 7 minutes. You’re just trying to warm them up and get those flavors mingling, not make them super soft, we want a little crunch still! Then, just take the pan off the heat.
While that’s doing its thing, let’s make that awesome orange tahini drizzle. In a small bowl, whisk together the tahini, fresh orange juice, warm water, honey, orange zest, and a tiny bit of salt. Keep whisking until it’s smooth and creamy. If it’s too thick, just add a tiny splash more warm water until it’s perfect.
Finally, scoop that warm beet and carrot mix into a serving bowl. Drizzle a generous amount of that orange tahini dressing all over it. And for a nice finish, sprinkle on some nuts for that extra crunch with some chunks of feta to finish it off. Serve it warm, and seriously, watch how fast it vanishes!
