Ingredients
6 large eggs, 1/4 cup milk (or cream), 1 cup drained canned corn, 1 cup shredded cheese (sharp cheddar, Monterey Jack, or a mix works great), 2 tbsp chopped fresh herbs (like chives, parsley, or dill), 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp butter or olive oil.

First, get your oven ready by preheating it to 190°C. If you’re going the pan fry route, you can skip this part for now.
In a medium bowl, whisk the eggs and milk together until they’re light and frothy. Stir in the canned corn, shredded cheese, fresh herbs, salt, and pepper. Give it a good mix to make sure everything is evenly distributed.
Now, you have a couple of easy ways to cook it:
Bake it: Melt the butter or heat the olive oil in an oven safe skillet over medium heat. Pour the egg mixture into the pan. Let it cook on the stove for about 2-3 minutes, just until the edges start to set. Then, pop the whole skillet into the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and golden in the center.
Pan fry it: If you don’t have an oven safe pan, you can just cook it on the stovetop. Melt the butter or heat the olive oil in a regular skillet over medium heat. Pour the egg mixture in and cook it for about 10-12 minutes, or until the bottom is set and golden. To cook the top, you can flip it carefully, or just cover the pan with a lid for a few minutes until the top is set.
Once it’s cooked, let the frittata rest for a few minutes before slicing into wedges. It’s fantastic warm or at room temperature.
Pro Tip: Frittatas are amazing for using up whatever you have! Feel free to add leftover roasted veggies, crumbled bacon, or sautéed spinach right along with the corn and cheese.
