First, grab a, sealable bottle, ready to hold your infusion. Carefully pour in your 2 cups of extra virgin olive oil.

Now, for the flavor magic! Add your handful of sundried tomatoes, 2 fragrant cloves of garlic, 2 tbsp of fresh basil, and 1/2 tsp of salt to the bottle. Give it a good swirl to combine all those elements.

This fresh sundried tomato and basil blend makes a truly amazing dressing for salads, or even pizza. It’s also absolutely perfect for drizzling over dishes like creamy avocado bruschetta or a fresh hummus dip, or anywhere you want a burst of sun, drenched flavor! Or actually anything to be honest. 

The best part? After a couple of days, all those flavors will have had time to get to know each other, creating a truly amazing, concentrated oil. It’s my little secret to making any weeknight meal feel special.

A little note for keeping your infused oil  fresh: When infusing oil with fresh ingredients like garlic or herbs, it’s vital to be careful of moisture, as it can create conditions for unwanted bacteria. For the longest, safest shelf life at room temperature, it’s best to use thoroughly dried herbs and garlic in your infusion. If you’re using fresh ingredients, always keep your oil in the fridge and use it within one week. For even longer lasting use, pour your fresh, infused oil into ice cube trays and freezing it. Once solid, pop the cubes into a freezer safe bag, ready for a burst of sun, drenched flavor whenever you need it!
