Get ready to discover a truly beautiful secret from nature’s pantry! I’m taking those delicate, often overlooked, fennel fronds and transforming them into a fragrant, vibrant seasoning that will absolutely elevate every dish. It’s pure magic, turning something simple into elevated deliciousness!

First, let’s prepare your fresh fronds! Preheat your oven to a  80° Celsius. Now, carefully remove the beautiful fronds from 1 fennel bulb from their stalks. Spread them out in a single, airy layer across two baking trays. Place them in the oven for about 15 to 20 minutes, or until they are completely dry and are nicely  crisp.

While your fronds are drying, grab your mortar and pestle. Place 1/2 cup of  rock salt inside, and begin to pound it with until the salt is broken down into your desired consistency. 

Once your fennel fronds are perfectly dry, remove them from the oven. Add them to the mortar and pestle with your prepared salt. Now, with gentle, circular motions, grind until those delicate fronds are in tiny pieces and are beautifully and evenly distributed throughout the salt. The aroma is just amazing!

Finally, sprinkle in 3 tablespoons of fragrant garlic flakes. Grind gently once more, just until they are evenly distributed, adding another layer of warmth and beautiful flavor. Give it all one last good stir, then  place your finished Fennel and Garlic Green Gold Salt into an airtight jar. And that is your secret to a sprinkle of pure flavor magic for any dish!

A little note for truly capturing the essence of fresh fennel fronds: while drying them for salt is divine, don’t forget how wonderful they are fresh too! Finely chop them and sprinkle over salads, use as a delicate garnish for roasted fish, or even stir them into a light pasta sauce just before serving.
