The Island Spice Skillet
The Concept: This skillet is a true taste of Mauritius, inspired by the vibrant Creole flavors and sun kissed ingredients of the island. It’s a beautifully aromatic, warming meal that feels generous and truly connected to the place we now call home.
The Elements
The Base (Vegetarian): A generous drizzle of vegetable oil, two large onions, sliced, fresh, minced ginger and garlic, one tablespoon of cumin and coriander powder, a sprig of fresh thyme, diced fresh tomatoes and a handful of halved cherry tomatoes, one potato, cubed, a few chili peppers for a kick, and fresh Himalayan salt and black pepper to taste. To make it more colorful, I’ll add sliced red and yellow bell peppers and a handful of sliced carrots.
The Hybrid Addition: Fresh, cubed tuna or chicken strips, seasoned with a pinch of turmeric and coriander.
Lets Cook:
In a large skillet, sauté the onions until golden. Add the ginger and garlic, stirring until fragrant. Stir in the cumin and coriander powders, then add the fresh thyme and the bell peppers and carrots. Once the vegetables are slightly softened, add the tomatoes, potatoes, and chili peppers, and let the mixture simmer for about 20 minutes, or until the potatoes are tender. For the hybrid dishes, you can either quickly sear the seasoned tuna or chicken in some of the simmering sauce or sear it in a separate pan and add it at the end this depends on your vegetarians, meatarians or pescatarians you choose. Serve this hearty meal with a side of fluffy rice and a spoonful of refreshing cucumber salad.
